Lemon muffins

Ingredients for 1 serving:

110 g mascarpone, or butter
6 m.-sized eggs
5 tbsp sweetener, liquid
400 g almond (s), blanched, ground
Use 1 m.-large lemon, juice and grated lemon zest
½ kl. Vial of lemon flavor
1 small Bottle of butter-vanilla flavor
1 packet of baking powder

Separate the eggs and beat the egg whites until stiff. Mix the rest, then carefully stir in the egg white. Fill the dough into 16 muffin molds and bake for 20-30 minutes at 170 ° C. Make a chopstick test.

Variation:
Use 2 tablespoons of cocoa powder (without sugar, not the instant drink) and 1 tube of rum flavoring instead of the lemon and lemon flavoring. Makes delicious chocolate muffins. Here you can also take the normal ground almonds, which are ground with the peel, as the dough can be dark.
