Pulled pork is a spicy, pulled pork dish from the southern United States, which is eaten with coleslaw as a snadwich. In the slow cooker or crock pot, the pulled pork succeeds without much effort and remains super juicy.

I seasoned the pulled pork meat with a Cajun spice mixture that I made myself. Link to the Cajun spice mix.

Ingredients for the pulled pork for 8 people:

2 tbsp Cajun spice mix
150 ml apple juice with no added sugar
25 ml apple cider vinegar
1.2 kg pork neck roast
300-400 ml barbecue sauce with no added sugar

The preparation:

Rub the meat thoroughly with the Cajun spice mixture, then put it in a sealable container (a plastic bag also works), close it well, and let it steep overnight.

The next day, put apple juice and apple cider vinegar in the slow cooker insert, take the meat out of the container and add it. Close with the lid and cook for 6-7 hours on high or 12-13 hours on low. Please turn the meat once and wait until it is done.

When the meat is done, remove it, wrap it in aluminum foil and let it rest for about 30 minutes. Then tear the meat with a fork and mix with the barbecue sauce.

Possibly put in low carb rolls, with Coleslaw on top and serve immediately.
