Tipsy apple muffins

The ingredients for 8 muffins:

1 apple (about 160 g) into small cubes
2 eggs size M
1 teaspoon oil
50 ml of water
100 g ground almonds or, for non-diabetics, 120 g wheat flour or whole grain flour
1 teaspoon baking powder (pure tartar)
50 ml of water
1 tbsp coconut flour
40 g xylitol
75 ml egg liqueur
1 tbsp xylitol extra

The preparation:

Peel the apple and cut into small cubes.

Put the ground almonds, coconut flour and baking powder in a bowl and mix. Then add the eggs and water, as well as the egg liqueur, then mix everything properly until a nice, smooth dough is formed. Now fold in the apple pieces.

Now put the dough in paper or silicone molds and bake at 200 ° C in a preheated oven for about 15-20 minutes.

You can also sprinkle the muffins with a mixture of cinnamon and xylitol before baking.

Instead of eggnog, you can also use rum or amaretto.
