Ingredients for approx. 30 balls
250 g Greek yogurt
1 tbsp oil
150g almond flour
1 packet of baking powder
1 teaspoon of salt
200 g grated cheese (to taste)
fried onions if desired. Salami. Ham. Sun-dried tomatoes. Paprika. Chilli or something else
Mix the quark, oil, flour, baking powder, salt and cheese, make sure that the dough is firm but not too firm, if necessary add a little liquid or yoghurt. Cut all other ingredients into small pieces and stir in. Shape the dough into balls the size of table tennis balls.
Bake the balls in the oven preheated to 180 ° C for about 30 minutes
Let the balls cool down, put them in a bucket looks good and can also be given away as gifts.
This is an original recipe from the Borkener country women, which I have adapted to my diet, i.e. low carb. Please consider: Nut flours soak up and swell up. The dough usually needs some liquid in the form of a little water, cream, lemon juice, nut milk or coconut milk *. A few tablespoons are often enough. The mixed dough should therefore always be a „tick“ too liquid rather than too firm.
Converting nut flour in conventional recipes:
Halve the amount of cereal flour according to the recipe. E.g. if the recipe provides for 200g wheat flour, the wheat flour can be exchanged for 100g almond flour *, walnut flour, chestnut flour *, etc.
