Mushroom Ham Fritatta

Ingredients for 2 people:

200 g mushrooms
3 red onions
4 slices of cooked ham
75 g lean ham cubes
6 eggs
200 ml milk
200 ml crème fraîche
100 g grated spicy Gouda cheese
butter
pepper & salt
paprika powder (sweet)
Cayenne pepper
herbs (e.g. „7 herbs“)
Parsley

Preparation:

Clean the mushrooms and cut them into slices, the peeled onions into fine quarter rings and the cooked ham into cubes.

Now put some butter in a pan, put the ham cubes in and let them out. Then add the onions and sauté until translucent. Then add the diced ham and mushroom slices and sauté. Season with pepper & salt, paprika powder & herbs, add the parsley to your own taste and then continue to steam or fry for about 5 minutes at low heat.

Meanwhile, whisk the eggs with the milk and crème fraîche and season with pepper & salt and a pinch of cayenne pepper. Stir in the mushroom and ham mixture, pour everything into a greased quiche dish and sprinkle with the grated cheese.

Bake the frittata in a preheated oven (180° C) for about 40 minutes.
