Cheap healthy spread
Ingredients for 2 people:
1 small onion
1 tablespoon capers
1-2 gherkins
1 tsp. Thai curry
1 tsp. Anchovy paste
¹/² Tsp. Salt
250 g low-fat curd cheese
5-6 Tbsp. Milk or buttermilk or cream according to taste
optionally 1 tsp. Caraway
Preparation:
Peel the onion and cut into very small cubes, also cut the cucumbers into very small cubes. Chop the capers and put everything in a large enough bowl.
Now mix the whole thing with the curry, the anchovy paste the paprika, salt curd and milk or one of the other dairy products and season to taste.
Leave to infuse for an hour or more, then give the spread on a bread, sprinkle it with caraway and enjoy.
