Spicy zucchini mince soup

Ingredients for 4 people:

Oil for frying
1 onion, finely chopped
400 g minced meat, mixed
2 tablespoons tomato paste
300 g ajvar
400 ml vegetable stock
2 cloves garlic, finely chopped
some chili powder
1 tsp marjoram, dried
1 tsp oregano, dried
1 tbsp. honey
some salt and pepper
1 small can corn
2 small zucchini
125 g crème fraîche


Fry the chopped onion in a little oil, add the minced meat and fry until crumbly. Stir in tomato paste, Ajvar and vegetable stock. Bring to a boil and season to taste with garlic, chili powder, marjoram, oregano, honey, salt and pepper. Simmer gently for about 10 minutes.

Place the corn in a colander and drain. Cut the zucchini into cubes about 1 cm, add to the pot with the corn and mix in. Simmer for another 5 minutes.
Finally, stir in crème fraîche.

Note: Mild or spicy ajvar – or a mixture of both – can be used in this recipe. Depending on how spicy you want the stew! In a proper container, you can also freeze it for few Weeks.
