New Year’s cake (Rulleskes)

18 oz.Flour,

6oz. Butter,

7oz. Sugar,

1 Egg,

2 teaspoons Cinnamon or 1 teaspoon cardamom (traditional in East Frisia)

1 teaspoon Anise or Aniseseed (traditional in East Frisia)

Take the sugar and solve it in a cup of warm water, and let it cool down. Melt the butter, let it cool off a little, and add flour, sugar-water, egg, and the spices. You might have to add a little water to it. Make sure the dough is not runny. Let it rest over night, and then roll it out into a thin layer. Put it in the oven, let it bake a little, but not crisp. Then turn it into little rolls, in a tin can.  and hide it good!!
